How to Grow Milk Kefir from Kefir Grains

Step 1: Gather Your Supplies

  • Kefir grains (1–2 tbsp per 2 cups milk)
  • Fresh milk (whole, 2%, or skim)
  • Quart-sized glass jar
  • Non-metal spoon & strainer
  • Cheesecloth, coffee filter, or clean towel

Step 2: Add Grains to Milk

  1. Place kefir grains in your jar
  2. Pour milk over grains
  3. Leave enough room for grains to move

Step 3: Cover & Ferment

  • Cover jar with breathable cloth or coffee filter
  • Let sit at room temperature (68–78°F)
  • Ferment 24–48 hours
    • Shorter = milder
    • Longer = tangier, thicker

Step 4: Strain the Kefir

  1. Use a plastic or wooden strainer
  2. Separate liquid from grains
  3. Grains → save for next batch
  4. Liquid → enjoy as-is or flavor

Step 5: Repeat & Grow

  • Kefir grains multiply over time
  • Extra grains? Share, make larger batches, or freeze for later
  • Keep grains healthy: room temp, avoid metal, and clean utensils

Tips for Success

  • Keep away from heat extremes & direct sunlight
  • Shorten fermentation if too sour
  • Rinse gently if grains smell or feel off
